Hello friends, how are you all? You must be fine. I am fine Alhamdulillah. First, I would like to thank @ngoenyi for organizing this Let's do it...Do It Yourself👉Craft, Creativity, Drawing, origami, DIY, Recycling and more.I am very happy to participate in this contest. Here I have come up with a pickle recipe to participate. The pickle recipe that I am going to share with you today is made with star fruit. I had many star fruit in my house. But because it was too sour to eat, no one was eating anymore. So I made a very interesting pickle with it. The pickle that has been prepared is sweet and tart—sharing with you the complete recipe tutorial of Tok Mishti Jhal Kamranga Achar. So let's get started.

cumin powder | 1/2 tsp |

jaggery | 2tbsp |
white vineger | 2 cup |
salt | 1tsp |
Step 1
First, the star fruits are washed and cleaned, and then the part that is on the side is cut and cut into long slices. After cutting the star fruit, I rubbed it with salt and left it for some time. By doing this, the particles in the star fruit will come out. Then I washed it with clean water and kept it in a net. This will cause the extra water in the star fruit to drain. This time I put a clean pot on the stove. Heat a little mustard oil in a pan. I kept the stove on low heat.
Step 2
When the oil in the kadai was slightly hot, I added a spoonful of five mix seeds. Stir the panchforan lightly and then add a tablespoon of mustard seed paste. After adding the mustard paste, I added garlic paste and salt to it. Stir all the spices well and saute for some time. When the smell of garlic came out, I put the cut star fruit in the pan.
Step 3
After putting the star fruit in the pan, shake it for a while and cover it. This will dry up the water in the kamaranga and make it slightly boiled. I stirred frequently. At the stage when it was lightly boiled I added the powdered masalas.
Step 4
After adding the powdered spices, the colour of the pickle changed. Stir all the spices and mix well in the pickle. The ritual looks full of masala. At this stage, the pickle is half-cooked.
Step 5
I added jaggery only when the pickle was half-cooked. If molasses is added first, there is a chance of burning in the pickle. Anyway I added jaggery to it as per my taste. Sugar can also be used here instead of jaggery. But I feel that the flavor of any pickle is doubled if jaggery is added instead of sugar. After giving attention, I mixed it well with a spoon. It will melt in the heat of the oven.
Step 6
This time I added two cups of vinegar in the pickle. If vinegar is added to the pickle while the pickle is in the oven, the pickle does not spoil. Lasts well for a long time. After giving the vinegar, the fire on the stove was increased. As a result, the pickle has grown well. I reduced the flame of the stove when the pickle got a little thick. Care should be taken not to burn under the pickle. Then the pickle will lose its taste.
Step 7
Now my ritual is ready. I roasted a few whole dry chillies before adding the pickle. Then I broke those chillies and sprinkled them on top of the pickle. I mixed the chilli well with the pickle. After a while, I took the pickle off the stove to cool down.

I poured the pickles into a bowl. This will cool it down and I can store it in jars. The ritual looks very good. The taste of the pickle was sour sweet and salty. I took a selfie in front of my prepared pickle. You will surely like my pickle recipe.
