Assalamualaikum, dear Steemian friends. wish everyone a very Happy New Year, and lots of love. I hope everyone is well. Today I will share with you the perfect Chalta Achar recipe. I always love to make pickles with different seasonal sour flowers. When it says mouthwatering, this clever recipe is very tempting to look at and eat.

Today I will share with you various tips on how to make the perfect pickle colour with sugar, along with a simple method of chopping. I hope you like my pickle recipe today.
First, let's know the ingredients needed to prepare Chalta Achar:👇👇

Dry chilies

Oil, etc.

Method of preparation:

-First I came up with three techniques for making pickles. Cleaned and wiped with a dry cloth. The pitfall of cutting sawdust in wet conditions is that the sawdust can slip.

  • Then, with the help of a knife, cut the chaltas into 4 pieces.

  • Now I will cut the sliced chalata into thin slices. If there is any black part in the cut part. I will cut it with the help of a knife, And if you slice like this, all the pieces will be almost equal and beautiful.

  • Chalata is very crunchy, so I wash the sliced chalata thoroughly with plenty of water.

  • Now I will boil down the tricks. So boil water- add one spoon of turmeric powder and one spoon of salt. mix all the ingredients well- cover with a lid and cook for 10 minutes. As my chalatas mature, the cooking time will be a little longer. If it is young chalatas, then only 5 to 7 minutes of cooking time is enough.

  • After 10 minutes, open the lid of the pan and check if the chalata is cooked. When the chalta is cooked 80%, separate the chalta from the water and drain the chalta water very well.. Now I will start the method of cooking pickles.

  • Place a pan in the oven , and put one cup of oil in it. When the oil is hot add a few cloves of garlic.I will fry garlic cloves in oil for a while; this will remove the raw smell of garlic. After that, I will give the ginger batter and, with it, the chalatas.Then add a spoonful of turmeric powder/ a spoonful of chilli flakes/ (dried chillies roasted and ground) and a spoonful of salt. Mix all ingredients well and cook for about 7-8 minutes.

  • After cooking for a while the chalatas will be slightly fried, then I will add one and half cup of sugar -(you can increase or decrease the amount of sugar according to taste). And if you want to bring out the perfect color of the pickle. you have to add a little more sugar.

  • Cooking with sugar for a while will dissolve the sugar and extract the water from the pickle:, so there is no need to use extra water in the pickle. Cover the pickle and cook on medium heat for 15 to 20 minutes. As a result of cooking on medium heat, And the colour of the pickle has changed a lot from the sugary water.

  • Now there is no need to cover the pickle. At this stage, I will add fried panchphodran powder (I have ground the panchodran), and adding this panchphodran guru will change the taste and colour of the pickle a lot. Now open the lid and cook for another 10 minutes with light stirring (remember, pickles are never good if cooked in a hurry). When the pickled sugar vein dries up, and take it out of the oven and let it cool.
