Ingredients: Beef humpback, fresh & red dry pepper, salt, seasoning cubes, onions, vegetable oil.

Utensils:- clean cooking pot, frying pan, spatula or spoon.

Steps on how to prepare

  • To prepare this recipe first wash the 1½ beef humpback which is your main ingredient. After being done with washing of the beef humpback place it on the chopping board and cut to your desired size. Since it was an order I cut the beef humpback into medium sized cubes.

  • After that, I washed and chopped 1 bulb of onions and 5 fresh peppers into little slices(it was meant to be peppery ).

  • After being done with everything that needed to be chopped.I washed and rinsed the pot which i would use for the cooking. After that I turn my chopped beef humpback into the pot, add my chopped onions and pepper too, and add 3 pieces of seasoning cubes(terra beef cubes). I then turned on my gas and placed the pot on the fire.

  • Then i added 2 cup full of water into the pot and left to boil.. I left the meat on fire for 30-45minutes to soften the desired taste of the customer who ordered it. While waiting for the beef humpback to boil, I quickly cleaned up the place and utensils I used for the preparation earlier and then took a rest with the remaining minutes.

  • When it reached 45 minutes, I checked the meat to see if it had softened. And Yes it did. I turned off my gas and dropped the pot.

  • The order was to boil the beef humpback and dry fry it to give a juicy taste. And being done with boiling the beef humpback, the next step was frying. Before commencing the frying I extracted the water(which turns to stock) I used in boiling the beef humpback leaving it dry.

  • I then sprinkled a half spoon of red dried pepper on the meat and then proceeded to fry it.

  • I washed and rinsed my frying pan. Turn on the gas and place the frying pan on the fire to dry off the drops of water that remained on it after washing and rinsing it. Once the frying pan was dried,I turned in a little quantity of vegetable oil since it was going to be fried dry(i.e with little oil) to keep it juicy.

  • I left the oil to hit for 5 seconds so it wouldn't dry off. After that I turned the boiled beef humpback which I extracted the stock from and added pepper into the oil and seared it for 1minute each side and I reduced the heat leaving it for 5seconds before I put it down.

  • I served it in foil paper and packaged it in a take out bag with serviette and a toothpick in it, for the customer.

This recipe is really common in my locality. It's loved for its juicy taste when boiled and fried dry. The men in my locality take beer with it which suits their enjoyment. It is available in eateries and sit outs.

Why did I prepare the dish? For who?

I prepared the dish based on an order from a customer which was placed in the morning around 8:30am and was to be delivered in the evening by 4:00pm.
