Shrimp Bisque 🍤
I've tried so many recipes for Italian Spaghetti ai Gamberi to make the perfect one. However, I found that it is very difficult to make a savory taste with limited ingredients. I've tried using different kinds of cheese, white wine, herbs, etc. but still couldn't get a savory taste. And then, I finally found the perfect way to make Spaghetti ai Gamberi!! The answer was pretty simple, use the Bisque. Bisque is the strained broth of crustaceans.
I'm going to make shrimp bisque that I'm going to use as basic stock for Italian Spaghetti ai Gamberi :) It takes quite a bit of time and effort so I recommend you to start making this when you have time. Okay, let's get started!

Ingredients
• 10 heads and shells of medium-sized shrimp
• 1 medium onion
• 2 medium tomatoes
• 1 Tbsp White Wine
• 800 - 900L water
• 1/2 Tbsp salt
• 2 tbsp olive oil
• 2 bay leaves
• 6 springs parsley
Steps:
1. Bring medium-sized pot and add 2 tbsp of olive oil, shrimp head and shells and stir-fry over low heat. Squeeze the shrimp's head with a spatula while stir-fries them. It shouldn't be burnt so please stir-fry them over low heat.
2. After stir-frying for 5 minutes, add 1 Tbsp of white wine to deglaze. *What is Deglazing: When grilling or roasting meat or seafood, melt the crumbs that are stuck on the bottom with wine, stock, water, etc., and make them as the basic ingredients for the sauce.
3. Add onion first, then stir-fry over medium-low heat.

When the onion gets softer, add tomatoes and stir-fry until the tomatoes are crushed. Deglaze one more time with juice from the tomatoes.

When the tomatoes start to crush, add 800-900 ml of water, 2 bay leaves, and 1/2 Tbsp of salt and let it simmer over low heat for about a 1 hour.
5. After turn off the heat, add 6 springs of parsley and let it stand for 5 minutes.

Strain. Discard shrimp shells and vegetables. Place to the container, and cooled in the refrigerator and used as a base for broth or soup.
