Understand the Colors of Your Garden Egg Harvest
Harvesting garden eggs has a lot more things involved than just gathering all of your produce from the farm.
When you harvest garden eggs, it's not just a matter of shoving everything in a box and bringing it back to the farm. You have to know what the crops are telling you.

When you look at the garden egg harvest I shared with you, you'll notice that they come in a lot of different colors, some are white and some are orange. The different colors represent the different levels of maturity. Knowing the mature state of the crops will help you when preparing these crops for the kitchen or when harvesting them from the field.
The best garden eggs for market and cooking are the white, smooth skinned ones. The reason that is so is simple. At this point, the skin is smooth, the flesh is firm and the seeds are tiny, this is what makes our local stews and soups taste great without any weird bitterness.
But with the orange garden eggs, the colour means it has been on the plant too long. Many people don't like the taste of orange garden eggs because they become bitter and the seeds are way too hard, I've done one before and believe me, it ruins your ste, the difference is very obvious.
That does not mean they're useless, they still have value. The seeds of orange garden eggs are strong and mature, and a good farmer will always keep them separate from the white garden eggs, so they can dry the seeds to plant them next season.
