I like how you kept everything simple and affordable. The Nigerian Jollof with the carrots and green beans looks really nice, and the idea of using the leftover veggies with the eggs was actually clever.
The part about only spending ₦4,000 for a full pot also fits the challenge perfectly. And honestly, Jollof is one of those foods that can feed plenty of people without needing too many expensive ingredients.
