My Dairy Game: Palm-oil Rice recipe for Dinner (11-1-2026)

Happy Sunday evening fellow steemenians Palm oil rice is a popular dish in Nigeria and is common in every household. Most often times we call it "MTN Rice". This dish is very delicious if prepared with enough crayfish, fish and pepper to bring out the flavor, aroma and sweetness of the food. ‎

I want to share this recipe with you guys especially other steemenians that are not from Nigeria so you too can cook, have a taste of our local dish and enjoy it to the fullest. ‎

First off, you start by parboiling your rice. Measure your rice based on the quantity you can finish cos waste is not acceptable in our household.

While your pot is on fire, go ahead to blend or pound your fresh pepper and crayfish, slice your onion and wash your choice of fish into a plate. Most people do not like fresh pepper but I do, I love it because of the aroma and hotness it adds to my meal. If you are cooking the dish, I recommend you use fresh pepper to enjoy it better.

The rice after parboiling
After about 10mins, turn off your gas, decant the water from the rice into a filter and wash the dirt off. Place your pot on fire and allow the water to dry off. Go ahead and add your palm oil, and allow it to stay for about 3mins. Add your pounded fresh pepper, crayfish, onions, and fish and allow to fry for few minutes.

I love combining and frying everything together so that the spiciness can be felt on all the ingredients of the dish. This is what will make your own dish more delicious than your neighbors meal.😋

After few minutes of frying, pour in about 2cups of eater depending on your quantity of rice. Add salt and seasoning cubes to your desired taste and pour in your parboiled rice. Stir generously till you have the taste you love. Then allow the rice to cook till soft and the water dried up. At this point, if you have vegetable or scent leaves, you can chop them and sprinkle on the surface of the rice. In my case, there was no vegetable leave so I enjoyed it this way.

At this point your kitchen and whole house will be giving a sweet scent and aroma because of the delicious food you just prepared.

I dished out my food and enjoyed it with a cup of juice. Fanning myself as I eat the food. I felt so satisfied and contented.
