Recipe of the Day, Week No. 44: (Vegetable Soup)
Hey chefs. Today I'll be making a really nice delicacy called Vegetable Soup through this Contest organized by @lirvic. Vegetable soup is an African cuisine reserved for lunch and made up of leafy greens and beef, fish or any other type of meat.
It's been long since I ate this soup so I decided to make it today for lunch.
Vegetables are really healthy for the human body. It also improves digestive health, aids in weight loss, reduces the risk of developing kidney stones and improves blood pressure. Vegetables are a rich source of vitamins, minerals, and fiber. These nutrients help keep your body healthy and prevent illness.
The list goes on and on, vegetables are really helpful for the body and that why I've made a habit of always eating leafy greens as a form of detox, especially as I've consumed unhealthy baked and fried foods frequently in recent times.
Ingredients for Vegetable Soup
Waterleaf
Pumpkin leaves
Onions and pepper
Fish
Meat
Crayfish
Seasoning cubes
Okra (optional)
Palmoil
Steps for cooking
First, wash all vegetables properly thrice to remove all sand and other impurities.
The pumpkin leaf is the first while the waterleaf is the second
Next, slice the onions, keep the pepper (you can use fresh or dried peppers, I decided to use the dried one today)
Wash the fish, beef and other meats to be used.
Then grind the crayfish and keep aside
Cut the okra and chop them carefully to be small.
Keep the palmoil to be used aside
Next boil the fish, meat together adding seasoning cubes, peppers and salt to taste. When soft remove the meat and especially the fish so it doesn't scatter and keep the meat broth in the pot
Next, add the waterleaf and leave for ten minutes (depending on how much it is)
Then add half of the crayfish, pepper, salt to taste and some seasoning cubes
Next, add the chopped okra inside along with the meat and fish your earlier removed
Finally, add your pumpkin leaves last with three big spoons of palm oil, you stir carefully.
Vegetable soup is ready to be eaten
I made this with a swallow called “garri”. It is made from grinded cassavas
The meal was really sumptuous and satisfying. It is a heavy meal befitting for lunch.
