Recipe of the Day. Week No.88: Rice Beans with sauce
Greetings dear friend, it is another lovely weekend and the Frist weekend of the year. I trust that it is going on just the way you've planned it.
I am here again to share with you my recipe of the day. This particular recipe is widely known and also enjoys by various set of human on earth because all the ingredients are readily available every where. From my pictures you can see the recipe I'm talking about.... rice, Beans, plantain and sauce.
Rice, Beans with sauce is one of the meal highly appreciated by adults and children as well especially during this festive season. Here in my country, it is the meal that many uses in welcoming their family and friends who visited them.
But as for me, I enjoys Rice, Beans and sauce always and having stew or sauce in the fridge makes motherhood easy in terms of breakfast, this message is vividly understood by mother.
Cooking veggies stew is very simple, l love adding fruit, vegetables and natural spice to it because it makes my meal complete, nutritious and balance.
It is time to start my preparation process. Please stay tuned and follow up.
Ingredients:
• Rice
• Fish
• Onions
• Salt
• Beans
• Pepper
• Ginger and garlic
• Vegetable oil
• Seasoning cubes
• Spices
• Tomatoes (Fresh and paste)
During preparation, the first procedure was washing and parboiling my rice and beans and set aside.
After washing the rice and beans, I transfer it into a bigger pot and mixed it properly. I go with three cup of water.
My next step was washing and seasonings my Scumbia Fish with salt, onions, pepper, and seasoning cubes, and I had it on a cooker for some minutes with a low flame till it got steamed.
I continued the cooking by putting a dry clean pot on the cooker and add desirable quantity of groundnut oil and add my fish for a churchy taste.
The next followed by adding Fresh tomatoes and then allowed it to cook some minutes so that it become soft and the water will also dries off.
It was the right time for us to put our paste and stir it vigorously so that it doesn't get burn. After few minutes,I added the fish stock.
This is to add my stock water and the fish, add seasoning cubes, salt, all the spice and I allowed it to Cook for 5 minutes.
Boom!! Our meal is ready for everyone consumption .

Stew is one of the recipe that can easily be combined with other meals such as boil potatoes, boil plantain, pasta boiled beans, boiled yam and lot more.
In my family, we are always happy when there is stew in the fridge because you can easily make breakfast without lateness to work.
