Recipe of the Day, Week No. 87: (Ekpang nkukwo)”
MY INGREDIENTS ARE:
Cocoyam
Sweet potato
Crayfish
Red oil
Onions
Periwinkle also known as (mfi)
Smoke fish
Canda also known as (kpomo)
Maggi
Pepper
Curry leaf
Salt
This are my unpeeled cocoyam and potato

I started by peeling my cocoyam and sweet potato

You see this very ekpang recipes with potato it’s so wonderful believe me you can actually give it a try, so I went ahead to washing them I wash them thoroughly

So after that I crate them one after the other and this was the result
Next thing I did was to put my oil in the pot then wash this my nkukwo leaf
I wash the leaf very well and begin to cut the leaf into smaller part then after that I start tieing my granded cocoyam

After tieing all the cocoyam I put all of my ingredients except the curry leaf and then add my hot water to it
While doing all of that my baby is already awake I had to pause to breastfeed my boy it was tiring but I had to do all of this for the love I have for them
Back to my cooking I pour in my hot water into the pot and then put my pot on fire immediately I did that my gas got finished I had to set firewood outside to cook my food , no time to check time hope

While taking care of my baby am still checking my food

After an hour boom my Ekpang nkukwo is ready I added my curry leaf lastly and brought it down oh this is the final look and me consuming it,I had sit down on the mat i deal with the food, omor it’s so sweet
It’s when I’ve eaten half of the food that I remember I had to right my little note into my food my people .
Ekpang nkukwo is one of our traditional food here in Akwa Ibom state Nigeria, it’s one of the food we made in all our traditional marriage.
Health benefits for sweet potatoes are;
It help manage blood sugar due to their low glycemic index
Sweet potatoes are packed with vitamin A for vision
Fiber for digestion and antioxidants that helps fight inflammation Etc.
Health benefits for wateryam are;
Water yam offers great health benefits like
Potassium, fibers, vitamin c and managing blood sugar which is good for diabetic patient too Etc.
