1 - Make your own “Simple Mixed Vegetable Rice” 🥕 (include ingredients, quantities, and steps) using my recipe or any other recipe of your choice.

First, I poured cooking oil into a pan and heated it gently. Once the oil was warm, I added the finely chopped onions and stirred them continuously until they softened and turned a light golden brown. After that, I added the remaining ingredients one by one next.
Then I washed the green chilies and chopped them finely. I also prepared a fresh ginger-garlic paste. When the onions turned golden brown, I added the paste and sautéed it until its aroma was released and the raw smell disappeared.
After some time, I added the potatoes and peas to the pan and gently stirred them into the mixture. I let them cook for a few minutes so they could absorb the flavors, stirring occasionally to ensure everything was evenly coated and well combined.
After washing the carrots thoroughly, I chopped them into small pieces and added them to the pan as well. I mixed everything carefully so the carrots blended evenly with the rest of the vegetables, allowing them to soften and absorb the spices as the dish continued to cook.
Then I mixed everything well and lightly mashed it so the vegetables softened and the flavors blended evenly. This helped the sweetener and ginger powder absorb properly, giving the dish a balanced taste.
Next, I began seasoning the mixture. I started with salt, as I prefer keeping this rice simple and light on spices. Usually, I only use green chilies, salt, and one other ingredient no extra store bought or homemade spices. Adding salt first helped bring out the natural flavors of the vegetables and set the base for the dish.
After that, I added cumin seeds (zeera) to the mixture. The moment they touched the hot oil, they released a warm, nutty aroma that filled the kitchen. Cumin not only adds a delightful fragrance but also enhances the overall flavor, giving the dish a subtle earthy taste. Its distinctive scent blends beautifully with the sweetness of the vegetables and the mild heat of the green chilies, making the rice more flavorful and inviting.
I stirred the vegetables well, making sure every spice blended perfectly. The aroma filled the kitchen, and the colorful mix looked ready to delight.

Next, I added water to the rice, keeping it about an inch below the grains, slightly more than usual around one and a half cups extra. Once the water came to a boil, I let the rice cook gently until it began to soften and absorb the liquid, releasing a comforting steam that filled the kitchen.

Once the water was boiling, I added the rice and gave it just one gentle stir. As the water started to reduce, I partially covered the pot, letting the rice steam slowly and cook evenly.
After some time, when I lifted the lid, a delightful aroma filled the entire kitchen. The rice had turned out perfectly, soft and flavorful. Everyone at home loves my homemade rice because I keep the spices simple, letting the natural taste shine. When I served it, everyone complimented me warmly. Alongside the rice, we had cooked fresh Saag, which I also served, and everyone enjoyed them heartily, savoring every bite. The meal brought a sense of warmth and happiness to the whole house.
