This is one of the most significant and important dishes that constitute Wazwan, the traditional Kashmiri cuisine, and without it, Kashmiri Wazwan is incomplete. It is one of the most loved components, and there would hardly be anyone in this valley—or even among those familiar with this cuisine—who would deny it. The aroma that comes out while cooking Rista is always mesmerizing, and whoever eats Rista falls in love with it.
Anyways, today I will be sharing with you the step-by-step preparation of Rista, along with all the ingredients we need. | Step | Description |

| 1 | Using a wooden mallet, pound the mutton on a flat stone until it reaches a consistency where it can easily be rolled into balls. |
| 2 | Add the animal fat to the meat and mix well until it is uniformly combined. |
| 3 | Add salt to the mixture. |
| 4 | Add cardamom and cumin seeds. |
| 5 | Mix everything thoroughly and shape the mixture into round meatballs using wet hands. |
| 6 | In a separate vessel, heat oil to its smoking point, then add red chilli powder and spices like fennel powder, ginger powder, and cinnamon. |
| 7 | Add water to the gravy and gently place the prepared meatballs into it. Do not stir immediately, as the meatballs may break. |
| 8 | Cook on medium heat until it boils, then add a pinch of food colour for appearance. |
