My traditional Cuisine//Egusi Soup// iron Chef// @Kennie19

I will be sharing with you my traditional cuisine. I took my time to prepare this sweet delicacy for my family and I'll like to share the recipe and procedures with you all.
Ingredients
• Stock Fish
• Dried Fish
• Cow Meat
• Periwinkles 3cups
• Pepper
• uzziza leaves
• Egusi 6cups
• Salt
• Palm Oil
• Onions
• seasoning
• Grounded Crayfish
Procedures
• Wash and clean your red meat thoroughly. Put in a pot, add salt, onions, maggi,and seasoning of your choice. Cover and boil in a low heat. I boil on a low heat because the meat has fat in the body to lessen the fat i have to turn a low heat and this will enable it to boil out its own water.
• Boil hot water to soak the stockfish and wash with cold water.
• Debone the dried fish and soak on a hot water.
Wash thoroughly before steaming.
To steam put in a pot add onions, maggi and salt. Combine both the stockfish and dried fish together.
• Wash and cut your uzziza leaves.
• Wash your periwinkles and set aside.
• wash your cooking put and set on fire, allow the water to dry off before putting your palm oil. Pour about 3-4 cooking spoon of palm oil. Turn the heat on a low. The palm oil should heat for about 3 mins before you put your egusi.
On a low heat fry the egusi to a dry texture for about 5 to 7 minutes.
• Pour in about 6 cups of water stir and add your water stocks i.e beef stock and fish stock.
• Add all your ingredients such as pepper, maggi, salt, meat and fish.
Cover the pot to boil for about 15 minutes, taste if your pepper and salt is well pronounced if not you can still add a little.
• Pour in your washed Periwinkles and let it for for a minute add your uzziza leaves and grounded crayfish let it boil for a minute.
Turn off your cooking gas and serve.
Your delicious Egusi soup is ready to be served.
This cuisine can be eaten with white rice or any swallow of your choice like semovita, poundo or garri etc.

Please note, another name for egusi is melon. So you can get a melon seed, blend and you'll achieve this.
