STEEMIT IRON CHEF 2021 ACT 1 ROUND 10 : Stuffed Cabbage with Chicken, Cabbage coulis!
Hello Iron Chefs!
I hope everyone has been working hard on their entry for this 10th round of Steemit Iron Chef!
Here I am today, same as every week, with my entry - this time based on cabbage! I hope you'll like it and try it too!
Stuffed Cabbage with Chicken, Cabbage coulis!
To make my dish, below are some of the ingredients I used! There is mainly cabbage and chicken in my entry.
So we have : Green Cabbage , Bok Choy and Red Cabbage!
Carrot, Chicken, coriander, mint, olive oil, salt, pepper, onion and little oyster sauce!
Steps of Preparation
I started by cutting little carrot, the white part of bok choy, onion, garlic, mint and coriander as you can see below to prepare my sautéed chicken.
I sauteed everything together, seasoned with salt and pepper. Just before taking off from the fire, I added little oyster sauce - Set aside!
Next I blanched the green cabbage and bok choy leaves in a boiling salted water. Once soft, you just need to cool it down in an ice bath - to keep a nice color.
I then stuffed the different leaves with the sauteed chicken that I prepared above.
You can give any form you wish with the help of plastic film.
Next I took all the bits and pieces of leaves and cooked in a chicken stock - and I blended it to have a nice smooth cream like sauce.
Season with salt and add little almond oil for a nice flavor.
Grilled red cabbage!
Cut a small piece from the red cabbage and sear it on a hot pan with little olive oil! Season with salt and pepper.
Add a dash of soy sauce at the end!
All the preps ready!
I also made a very fine raw salad with the green cabbage and red cabbage - I let them in ice water to stay crispy!
Plating...
Now it was time for my favorite part when cooking...The Plating!!!
I started by placing the grilled red cabbage and stuffed green cabbage on a white plate!
Then I put some of the sautéed chicken on the grilled red cabbage and the crispy cabbage salad on top of the stuffed ones!
I put a drop of the cabbage cream...but I was not 100% satisfied...

I really had a lot of fun plating this cabbage based dish...i just love that green color that came out very well on the white plate!

Here we are for my 10th entry in Steemit Iron Chef...as I mentioned before, I will try to be present in all 15 rounds of Steemit Iron Chef - a real food contest where quality is always rewarded!
