STEEMIT IRON CHEF ACT 2 ROUND 01 : Go Green - Fish filet with zucchini scales and truffled peas cream!
Hello beautiful people of the SIC Community!
I will start this post by firstly apologize for being late in posting my entry...I was just so busy the last 2 days and it is only today that I managed to get some free time making my entry!
I just don't want to miss this first round...and such a creative one!!!
I hope the chef will accept and validate my entry!
For the first round of the 2nd act, the chef asked the contestants to create a monochromatic dish...
So I am coming up with a GREEN entry...hope you like it!
Go Green - Fish filet with zucchini scales and truffled peas cream!
Peas cream with truffle oil
Here I simply cooked the peas in salted water and when soft I blended it until smooth and season with salt!
Zucchini Scales
Another easy element of my dish is the fish scales that I created with zucchini slices which are simply seasoned and steamed...
Then I pan fried my fish filet and delicately placed the zucchini on...
Bok Choy / Fried herbs
I wanted to make some crispy fresh herbs...so I selected basil, coriander and mint leaves and deep fried them to keep that lovely green color...
While the bok choy is blanched and sautéed with butter and garlic!
All ready for plating...
Plating...
As usual... I had so much fun making the plating...freestyle!!!
Started by putting the peas cream on a white plate...
Next was to place the fish...need to be very delicate here or you risk to break the filet...
And complete the plating by placing the different garnishes that I prepared...

Oh Chef, you always surprise me with your great dishes😍 I'm so eager to read your post in every round. Sad that I missed few of your posts from last rounds. But I should make some time for that. Anyway, this dish is also a best of your work.
