My Soup of the Week Contest. Chicken Sotanghon Soup

Hello everyone. This contest is prepared by @roquiro with the entry theme: My Soup of the Week

We call this Chicken Sotanghon Soup. What is good about this soup is you can put any veggies, add more or have less. I chose more for today because this was my packed lunch that i will be having at work. This is really my go to noodle soup, very comforting in any weather.

Veggies i used are indicated in the photo below. There was also ginger and garlic which was minced and sauteed then black pepper and salt for seasoning. The yellow orange color of the soup came from the Annatto Seeds. The seeds are discarded but the color was extracted by soaking the seed for a few minutes in warm water.

I remember when I was a kid, we used to go to this small eatery beside the church. They had the best chicken sotanghon soup of all the eateries there. They serve the simplest version. You can chose to have chicken or egg or both. Shredded cabbage and carrots as the only veggies in the soup.
