There are different varieties of kebabs in our country. The method of making each kebab and its taste are different. Shami kebab is a well-known and popular kebab in Bangladesh. To make it, relatively all the ingredients that are available at hand are used. I sometimes make Shami kebab for my family. Because my children love to eat kebabs. Moreover, several ingredients are used in kebabs, most of which are necessary for our health. Because it contains proteins, carbohydrates, fats and various types of vitamins. I make this kebab recipe to serve everyone at any big event, birthday, Eid festival, get-together party. Everyone enjoys this kebab.My experience to make kebab is pretty good.

| chickpeas | 1 cup |
| Ginger paste | 1 tbs |
| Garlic paste | tbs |
| Chili powder | 1 tbs |
| Turmeric powder | 1 tsp |
| Cumin powder | 1 tsp |
| coriander powder | 1/2 tbs |
| black paper powder | 1/4 tsp |
| Green chili | 3 pc(chopped) |
| Cinnamon | 2 pc |
| Cardamom | 3-4 pc |
| Bay Leaf | 2 pc |
| Star Anise | 1 pc |
| Coriander leaf | 1/2 cup |
| Egg | 2 pc |
| Onion chopped | 1 cup |
| Salt | to taste |
| Mustered oil | 2 tbs |
| Water | 2 cup |
| Soyabean oil | for fry |
Step 1 : Preparing Chickpeas & Beef
After gathering all the ingredients required to make Shami Kebab, I will wash the chickpeas thoroughly and soak them in water for four to five hours. I will cut the beef into small pieces so that the meat will cook easily.

Step 2 : Mixing Spices With Beef & Chickpeas
Add garam masala with beef and chickpea
Add ginger garlic paste and all the spices
Add mustard oil and mixed well
Now I will take the chickpeas in a bowl and pour the beef in it. Then I will mix it well with the above mentioned quantities of ginger garlic paste, salt, chili powder, turmeric powder, coriander powder, cumin powder, black pepper powder, bay leaf, cinnamon, cardamom, star anise and mustard oil.
Step 3 : Cooking the Mixture
After mixing all the ingredients well with the beef and chickpeas, I add two cups of water and cover it with a lid. Now I put the pot on the stove and let it cook in medium flame for 1-1.5 hours. However, if it is frozen meat, it may take a little longer.

Step 4 : Draining Water & Removing Whole Spices
Drain water and remove whole garam masala
After 1.30 hours, when the meat is cooked, I will drain the remaining water completely. Now I will pour the meat from the pot into a bowl and keep it aside to cool for a while. At this time, I will remove the whole garam masala from the meat.
Step 5 : Blending the Mixture

Now, in a blender jar take the beef and chickpeas and blend them. It's okay if the beef is a bit grainy, you don't have to blend it very finely.It will enhance the test of Shami Kebab.
Step 6 : Mixing Onion, Chili, Coriander & Eggs
Now I will pour the blended mixture into a large bowl and mix it well with chopped onion, green chilli and coriander leaves one by one.

Then I will add two eggs for the crunchiness and mix it well. My kebab making process is complete almost.
Step 7 : Shaping the Kebabs
Now I will take oil in a bowl. I will apply a little oil on my hands and then take a little mixture and shape it into a kebab. The kebabs can be made in this way and put in a zip lock bag and kept in the deep freezer for about a month.

Step 8 : Frying the Kababs
When the oil is hot, I will drop the kebabs one by one. I will fry the kebabs until golden brown. Once fried, I will place the kebabs on a tissue paper so that the extra oil will be absorbed by the tissue paper.My shami kebab is ready to serve.
