How to cook our delicious Nigerian Hausa traditional food Tuwon shikafa miyan kuka.

Tuwo Shinkafa is a northern Nigerian recipe that is prepared with the soft rice variety. It is usually served with Northern Nigerian soups: Miyan Kuka, Miyan Taushe etc. It also goes well with other Nigerian soups.

The rice used for Tuwo Shinkafa should be the soft rice variety that becomes sticky when cooked. This is so that the grains can be easily mashed to make a mass of fufu (tuwo).

HOW TO MAKE TUWO Shinkafa" (Tuwo Rice)

To prepare tuwo Shinkafa you must first soak it.

RECIPES OF TUWO SHINKAFA
i. 2 cups of tuwo rice.
ii. 4 cups of water

    PROCEDURES
  1. Boil some water in a small sauce pan and set to boil on medium heat.

  2. After that, Add the rice and boil/cook until it changes to a paste form, stir/turn continuously until you get a thick and stretchy mix.

  3. Add a little water if it still tick, cover the sauce pan, then reduce the heat to low heat and allow for 2 minutes, after 2 minutes mix thoroughly until the Tuwo is smooth.

HOW TO MAKE MIYAN KUKA
Miyan Kuka is a Hausa traditional Nigerian soup made from powdered baobab leaves. Here's a simple recipe:

Ingredients:
1] one cup powdered baobab leaves (kuka)

2] 500g meat (beef, chicken, or goat meat)
3] onion, chopped
4] 2-3 tomatoes, chopped
5] 2-3 tablespoons of palm oil
7] Salt to taste
8] Pepper to taste
9] Seasoning cubes (optional)
10] Water

procedures

  1. In a pot, cook the meat with onions, tomatoes, pepper, seasoning cubes, and salt until tender.
  2. Add water to the pot (enough to cook the soup) and bring it to a boil.
  3. Reduce the heat and gradually add the powdered baobab leaves to the pot, stirring continuously to prevent lumps from forming.
  4. Simmer the soup for about 15-20 minutes, stirring occasionally.
  5. Add the palm oil to the soup and continue simmering for another 5 minutes.
  6. Adjust the seasoning to taste.
  7. Serve hot with tuwon shinkafa.
