Wow really good idea to change things in the way we want. I also feel a big change. My goal is a big self-catering house with amazing nature around me. I know what you mean, there is one site in us, who loves city live and the other site who loves country life. I know this feeling very well. It´s not easy to combine.
I can really recommend eating organic food. I think it´s better for our health and environment.
True, there is a lot of push and pull in this. But I have settled in my mind now, specially with so much of chaos around and uncertainty, plus so much of surveillance only makes me wonder, is city life really worth it.
Wish you all the very best with your catering house project. I am sure it will do very well, with a peaceful environment.
My plan is to start a meditation center in some place like that, probably wherever I will choose to make my home.
