Caramelized Brussels Sprouts With Bacon


Great as a side dish, or a treat any time of day, Brussels sprouts are low in Saturated Fat, and very low in Cholesterol and perfect for keto diets!


What are Brussels sprouts? Round little globes of cabbagey like flavor with loads of Thiamin, Ribloflavin, Iron, Magnesium, Fiber and Vitamins A, C, K, B6, and Potassium. They are often thought to be an "acquired taste" and for many, that acquisition doesn't come.

I used to be in that camp myself. I couldn't stand the flavor of them. Ugh, the texture was mushy gross, too. As a child, eating Brussels sprouts was thought to be the ultimate punishment.

What I found out was that they were cooked wrong. Boiled nearly to the point of extinction and little to no seasoning was how they were served. No wonder that so many people grew up hating them.

However, by roasting the Brussels sprouts in either butter or coconut oil, adding some salt, pepper and garlic and sprinkling with Parmesean cheese, you now have an amazing vegetable that is full of flavor! What could be better? Oh yeah-adding in the smokey deliciousness that is bacon. Even the Frenchman will eat them like this.

I give you the Frenchman approved method of caramelized Brussels sprouts with bacon.


As picky as he can be about food some days, knowing that he will eat these Brussels sprouts makes me smile. The crispy edges, the savory seasonings and the smokey goodness all dance around the nose and on the tongue.

Enough poetic language, right? Let's get down to eating!

Ingredients:

  • 1 lb. Brussels Sprouts
  • 1 lb. turkey bacon
  • 1 garlic clove, minced
  • 4 T. butter or coconut oil
  • salt and pepper to taste
  • 1/2 cup Parmesan cheese, shredded (optional)

Instructions

  1. Begin by slicing the bacon into “lardons” or 1/2 inch strips.
  2. Prepare the sprouts by slicing off the hard end and cutting in 1/2.
  3. In a hot skillet, begin to cook the lardons until crispy.
  4. Remove from pan and set aside.
  5. Add the garlic and sautee for one minute.
  6. Add the butter and sprouts and sautee until sprouts begin to caramelize, about 6 minutes.
  7. Add in the bacon lardons and season with salt and pepper.
  8. To serve, sprinkle Parmesan cheese over each serving.
