Making lobster biryani at home is easier than you think, and the results are absolutely worth it. The key is balancing the delicate sweetness of lobster with the bold, fragrant layers of spiced rice.

Ingredients Needed:

  • 2 fresh lobster tails (or whole lobster), cleaned and cut into chunks
  • 1½ cups basmati rice, soaked for 30 minutes
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • Fresh ginger-garlic paste
  • Green chilies, yogurt, mint, and cilantro
  • Whole spices: cinnamon, cardamom, cloves, bay leaf
  • Biryani masala, turmeric, red chili powder
  • Saffron strands soaked in warm milk (optional but recommended)
  • Ghee or butter for richness

Steps of preparation:

Cook the Rice: Boil the soaked basmati rice in salted water with a few whole spices until it’s 70% cooked. Drain and set aside.

Prepare the Lobster: Marinate lobster pieces in yogurt, ginger-garlic paste, salt, turmeric, and a pinch of red chili powder for 15 minutes. Lightly sauté in ghee until just cooked—do not overcook!

Build the Base: In a heavy-bottomed pot, sauté onions until golden. Add tomatoes, spices, and the rest of the marinade. Cook into a thick, aromatic gravy.

Layer It Up: Start with a layer of rice, then add lobster pieces, fresh herbs, fried onions, and a drizzle of saffron milk. Repeat layers.

Dum Cooking: Seal the pot with foil and a lid. Cook on low heat (dum style) for 15–20 minutes to let the flavors meld.

Serve: Gently fluff the biryani, garnish with coriander and lemon wedges. Pair with raita or chilled mint chutney.
