Today I made brown sugar pandan cake

One of my family's favorite traditional cakes is the brown sugar putu ayu cake, which is delicious and addictive.

The sweetness is just right, the texture is soft, tender, savory, chewy, and doesn't smell fishy at all.

Let's make it together. First, I steam the grated coconut for about 10 minutes.

After 10 minutes, we remove it. And while it's still hot, we immediately pour it into a mold that I've greased with vegetable oil.

Press it down, compact it first, and let it cool completely. Next, in another bowl, add the eggs; use fresh ones, friends.

Also add the granulated sugar and baking powder. Then, we mix until fluffy, pale white, and thick.

Once the mixture is thick, we add the wheat flour and tapioca flour. Don't forget to sift it so there are no lumps. clump.

Add a pinch of salt and vanilla, then mix on low speed until everything is evenly combined. Once combined, pour in the coconut milk and add a pinch of pandan paste. Return to the mixer, using low speed, and mix until evenly combined.
And make sure the texture is thick, friends.

After that, divide the dough in half, evenly, and pour half of the dough into the mold.

After that, I steam it over low heat until the steamer is hot and boiling, steaming for 20 minutes.

Once cooked, I add the brown sugar that I've cut into small pieces.

Then I pour in the remaining dough until it covers all the brown sugar.
Then steam it for 40 minutes until cooked. Once cooked, remove from the steamer, let it cool, and then serve it to the family.
