"Ramen", the comforting Asian broth

Sharking at will, the broth is one of those "comfort food" dishes that we like to enjoy in winter. In its Japanese version, it is embellished with wheat and pork noodles. A basic bowl, a real cult in Japan!

When the mercury plummets, the broth comes back hot boiling in the thatched cottages. Invigorating at will, this beverage warms up the short winter days. In the land of the rising sun, this fundamental of gastronomy is adorned with many other attributes than just simmered bones. Noodles, sauce, oil and vegetables, meat or even fish turn this liquid into delicious ramen. In Belgium, this Japanese dish made its appearance thanks to the Yamato restaurant, located in the Saint-Boniface district of Ixelles. "This is the oldest ramen restaurant in Belgium. Yuji Inagaki opened it in 1987. Chef Shigenobu Kato inherited it in 2016 when Yuji returned to Japan for a well-deserved retirement," says Keiichi Mitsuno, Chef Kato's assistant, who also owns Menma ramen restaurants in Brussels.
