The kitchen is the most important part of a restaurant.
- Mise en Place (Preparation)
This is the most critical component of any restaurant kitchen. It literally means "everything in its place." Chefs complete all preparatory tasks before they even begin cooking:
Chopping Vegetables and Meat: Onions, tomatoes, ginger, garlic, and various meats are pre-cut into specific shapes and sizes and kept ready.
Base Gravies and Sauces: In Indian restaurants, core gravies (such as Makhani, Onion-Tomato Masala, or White Gravy) are prepared in large batches in advance and then cooled down.
Organizing Ingredients: All chopped ingredients and spices are placed into separate containers and arranged systematically at the designated 'Cook Station.'
- Order Management (KOT – Kitchen Order Ticket)
When a customer places an order, a ticket (known as a KOT) is transmitted to the kitchen.
Station Allocation: The Head Chef (or a Commi/Sous Chef) distributes the orders across various specialized stations—such as the Tandoor section, Tawa section, Chinese (Wok) section, or Fryer section.
Timing: Different dishes are cooked in a synchronized manner to ensure that all the food for a single table is ready and served simultaneously.

- Cooking Techniques (High Heat and Heavy Cookware)
Restaurant food tastes distinct from home-cooked meals primarily because the cooking methodology employed is different:
Commercial Burners: Restaurant gas stoves generate an extremely intense flame, allowing food to cook in a matter of seconds (this is particularly true for Chinese cuisine).
Heavy-Bottomed Woks/Pans: Heavy-gauge cookware is utilized to prevent food from burning and to ensure that heat is distributed evenly throughout the cooking process.
Flash Cooking (Blast Cooking): Pre-cooked meats or sautéed vegetables are added to the pre-prepared base gravies; cream, butter, and spices are then added, and the entire dish is finished over high heat in just 2 to 3 minutes. 4. Plating and Garnishing
