Sadly, no! But I saw it with my own eyes! Isaw a purple train arrive and I was telling myself, "it's funny, the colors really make it look like the EVA fron Shinji Ikari in Evangelion" 😅 Have you googled how the fake cockpit looks inside? It's impressive.
Also as JR Pass travelers, as @yo-yo mentioned you don't have free tickets to the fastest ones, and I think the EVA was one of them...
Still even the "normal" ones are so comfortable, even in second class, it's a pleasure being transported that way.
