Warming bean casserole.
Great for a cold day to bring a bit of heat to your bones.

- Season with salt and pepper add lime juice. Allow simmer on low heat for 15 - 20 min (should just be bubbling)
- Add Basil and coriander and simmer for a further 5 min.
Serving:
This goes great on its own served in a bowl with some crunchy wholemeal rolls. If you are looking for something more filling you can serve with cous cous or rice.
Another idea is to use this as a pre made lunch for during the week. Typically I'll split this into 5 equal portions and take one a day. Delicious, healthy, and nutritious food, just pop it in the microwave for 2 1/2 mins to heat

My go to meals are vegan chili and a vegetable stir fry...always delicious and definitely great for re heating
Yeah the chilli is great for a reheat. I make a mean 7 bean chilli.

This one was served with Jalapeño corn fritters! Oh man, I'm making myself hungry now LOL
Thanks for checking it out @islim, how are you finding it here on Steemit?
@orignalworks
Yum! This is another one that is right in my wheelhouse! I love these types of meals that taste even better a few days later.
For sure! Anything that means you can be a lazy git later in the week is a winner with me!
This looks amazing =) I'm making a lentil curry right now and all kinds of stews are so delicious =). Great for lunch boxes too :)
Oh I love a lentil curry. So much goodness in there!
It was really delicious :) A new favourite =)
Looks delicious. I had a vegan roast dinner earlier today.
Sure is man, and super handy for the midweek lunches too.
