Life's NO Secret #7 | Cooking & Baking Theraphy | Honeycomb Cookies

Chinese Lunar Festival has been over for more than 3 months but it still feels like yesterday for me. Maybe, it's because that this would be last time for me to really prepare for this festive holidays. Not that I will not be celebrating this festival anymore but just that with my new work abroad, I may not have the time, place or mind to focus on cooking. I find that in these past recent years, I’m constantly looking out for different options of therapies. Can’t afford to have retail therapy all the time as it’s just too costly.

I’m quite happy with myself since I’ve managed to bake two different versions of cookies; honeycomb cookies and pineapple tarts and most recently, I even tried my hands on making a dim sum dish known as Loh Mai Kai. Not matter how tired I was, somehow when it comes to trying out something new, it just excites me all together.

This years' cookie making of honeycomb was an interesting experience. This particular cookie is commonly made sweet with the dough slightly on the thick side. Yeah ! I took the recipe from Mr Google. Should have known better that somethings just don’t work from the internet.

Eventually, I had to ask my aunt who’s an excellent cook. She passed on to me a secret recipe. Didn’t they always say that every Chef has a secret recipe, that’s why their dishes come out totally amazing as compared to their Commis Cook !

My aunt’s secret recipe on Homemade Honeycomb Cookie

2 cups all purpose flour
2 rice flour
2 glutinous rice flour
2 cup sugar
10 eggs (Grade A)

Now, it seems that there is another recipe that comes from the North of Malaysia which is also very famous. I’ve never heard of such recipe that uses a special Indian spice but then never say never, right..

1 bag rice flour
9 eggs
Less than 2 cups all purpose flour
1 pics of Indian Kapur (Chalk)

In addition to these two recipes, this year I was introduced to a savoury version of Honeycomb Cookie. It tasted a bit salty and spicy which kind of suits my taste since I don’t really have a sweet tooth. Hmm.. maybe I’m already sweet enough :) It was quite hard to find this recipe as it isn’t very common and still very new. But, when you ask Mr Google, somehow and somewhere, you will definitely find it.

The recipe goes like this..

Ingredients (A)
220 gm caster sugar
250 gm rice flour
4 tsp of tapioca starch
4 large Nutriplus omega eggs
Concentrated thick coconut milk from 2 coconuts (about 350 litre) (Add bit by bit don’t over liquid, if over liquid then you need to add more rice flour….
1 tsp of salt (After fry, if you need more salty taste, then add more 1/2 tsp – depending on your own tastebud)

Flavouring spices (B) (dried mill blend so no need to wash)

1 tsp cumin (jintan putih)
4 cloves of garlic (4 little cloves from 1 bulb garlic) (cut into small pieces)
2 tbsp dried shrimp (udang kering) (no need to wash coz you need to mill it, dry is better in milling using mill blender)
8 dried chillies (cut into small pieces)
1 stalk of curry leaves (cut into small pieces)
4 kaffir lime leaves (cut into small pieces)
3 tsp of Baba’s red chili powder (more if you like it spicy!!!!)

Method
Crack eggs and mix with caster sugar in a bowl, use egg whisker and beat it
Put in rice flour, tapioca starch, eggs, coconut milk, salt – sieve all
Add in flavouring spices (B), after that use egg whisker till mix everything together.

And into the hot oil frying pan it goes just as the others

Now, with these three recipes, I’m not sure when I’ll have the chance since I’m far away from home and it’s not like I can bring my entire baking utensils over with me. Guess, I will have to keep this recipe live on Steemit and perhaps inspire others out there to try it out. For now, it’s just me staring at the recipe and dreaming of my baking and cooking escapades.
