INTRODUCTION

One of the most widely used spices for cooking is pepper. This is because of its admirable aroma with good nutritional supply and good taste.

There is the fresh pepper and there is the dry pepper. While the fresh pepper contains more water in it, the dry pepper as its name suggests, contains no water. The dry pepper lasts longer than the fresh pepper. The fresh pepper can easily get spoiled if not carefully handled.

Dry Pepper is made available all every year without cease. This all year round availability is as a result of efforts made to preserve it in order to avert wastage. One of the popular methods used in preserving pepper is drying it in the sun. This drying makes it easier to be transported from one location to another and for easy storage. Many homes, restaurants and other food vendors make use of the dry pepper.

How Dry Pepper is Obtained and Preserved

All pepper at maturity is fresh. To process and preserve the pepper, its fresh state would undergo some drying processes to bring it to a dry state. Some these processes include:

  • Drying the pepper in the sun

  • It could be dried using oven or scientific method like mechanical drying

  • The water from fresh pepper could be removed by exposing the fresh pepper in a room of low temperature

The essence of preserving the pepper
Pepper is preserved for these reasons:

  • To make it last long

  • To reduce the effect of fungal or microbial actions

  • For cooking, easy storage, and transportation.

  • Preserving the pepper so as to make it available during and off seasons to avoid it scarcity

  • Dry Pepper is a commodity that has a commercial value for traders of the commodity

Dry Pepper is Needed For Good health

Pepper generally, is good for our health but specifically dry Pepper. This means that its value is beyond preservation and commercial reasons. It goes to the extent of providing some nutritions for sustaining good health. Some of the health benefits of dry pepper includes:

  • Dry pepper increases appetite as it makes food look attractive

  • It improves the metabolic system and helps the digestive processes

  • The vitamins A and C that it contains helps to build the body immunity

  • Pepper contains heat elements and this helps to clear body congestions

  • It helps to produce agents that fights the free radicals that could make our health to degenerate

Conclusion

Dry pepper is quite useful in all its ramifications. It is good for health, commercial and home use. There are farmers that are really involved in the cultivation of pepper and its subsequent processes for drying.

All dry pepper were once fresh pepper. The fresh pepper were processed into dry Pepper. Some of the drying methods could be sun drying, mechanical drying, and air tight/ventilation. These are some of the ways farmers dry their fresh pepper.
