Apple & Cinnamon Pancakes..

Ingredients:

4 cups of oat flour
4 tspns baking powder
big pinch of salt
8 eggs
4 cups of full cream milk
8 Tblspns Maple Syrup
4 fresh apples cut up and ground through a smoothie blender with a big spoon of milk
1 Fresh lemon, squeeze the lemon juice into the mix.

Combine all the ingredients into a large mixing bowl and mix with a stick blender or mixing machine.

In a separate cup or cereal bowl, mix ground cinnamon and sugar in a ratio of 1 part cinnamon - 2 parts sugar (this will be used to sprinkle over the finished pancakes.)

Take a thin a base pan like the ones below and coat it with a dash of sunflower oil. Warm up the pan and pour off any extra sunflower oil that remains in the pan.

I use a gas stove.. so each of you will have to find the right temperature setting for your own stove tops.

On a medium heat, pour half a spoon ladle full of batter into the center of your pancake pan and tilt the pan until you have spread the batter evenly throughout the pan surface in a nice circle.

Fry the pancake until you see the edges either pulling away slightly from the pan, bubbles throughout the pancake surface as the batter is setting, loosen your pancake from the pan gently with a non stick spatula and flip.

Once the second side has fried for a few seconds, slip the pancake onto a plate that already has a dusting of cinnamon/sugar mix and sprinkle the pancake on the top with some more of the mix.

Continue the process until you have completed frying up all the mixed batter you have made.

Serve hot with a dollop of maple syrup and ice cream on the side
