Rice with seafood, in some ingredients can have a similarity to the well-known Spanish paella. Many may think that they are the same, but to demonstrate the great difference, I invite you to prepare the rich and exotic rice with seafood Tumbesino, also known as Peruvian. Ingredients
05 tbsp. vegetable oil
03 clove garlic, ground
01 onion, chopped
04 tbsp. ground pancake pepper
500 gr mixed seafood
02 1/2 tzs. fish stock
04 tbsp. white wine
03 tsp. chopped coriander
06 tzs. cooked rice
1/4 roasted red pepper
08 tbsp. cooked peas
02 Tbsp annatto oil
02 tbsp. chopped parsley
salt and pepper
How to prepare Tumbes Seafood Rice
In a large skillet, heat the vegetable oil over medium heat and brown the garlic and onion for about 4 minutes.
Add the ají panca, season with salt and pepper, and after three minutes add the washed seafood.
Sauté over high heat for four minutes. Add the broth, the wine and the chopped coriander, and cook for three more minutes.
Add the previously washed rice 3 times, the chopped pepper and the washed peas, and cook for approximately one minute, precisely until all the liquid is consumed.
Pour in the achiote oil, mix well with the spoon and remove from the heat.
