Spinach Pie

Ingredients:

  • 1 package (about 500g) frozen chopped spinach, thawed and drained
  • 1 cup feta cheese, crumbled
  • 1 cup cottage cheese
  • 4 eggs, beaten
  • 1/2 cup olive oil
  • 1 onion, finely chopped
  • 1 bunch fresh dill, chopped
  • Salt and pepper to taste
  • 1 package phyllo dough sheets

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. In a large mixing bowl, combine the thawed and drained chopped spinach, crumbled feta cheese, cottage cheese, beaten eggs, olive oil, chopped onion, fresh dill, salt, and pepper. Mix well until all ingredients are evenly combined.

  3. Lay out one sheet of phyllo dough and brush it lightly with olive oil. Place another sheet on top and brush with oil again. Repeat this process until you have a stack of about 6-8 sheets.

  4. Spoon a portion of the spinach mixture onto the phyllo stack, spreading it evenly.

  5. Carefully roll the phyllo sheets with the spinach mixture into a log or spiral shape.

  6. Place the rolled pie into a greased baking dish, tucking the ends under.

  7. Repeat the process if you have more spinach mixture.

  8. Brush the top of the pie with olive oil.

  9. Bake in the preheated oven for about 40-45 minutes or until the phyllo is golden brown and crispy.

  10. Allow the spinach pie to cool for a few minutes before slicing and serving.
