Holiday Spiced Orange Curd Jelly - FOOD PHOTO SHOOT

Just 4 days left until Christmas!

Anyway, let’s talk about curd. No, not like curds and whey, like the yummy, delicious, sweet jelly that should seriously consider petitioning for a new name. I’ve always loved the look of a big bright orange with little cloves stuck all over it at Christmas time, but I’ve never tried it.

You know what guys? It really does smell amazing and it’s something I’ll be doing all season. I hope my family won’t mind having oranges randomly placed throughout the house. Haha, my little brother saw one of them and asked me what kind of fruit it was. He thought it was dragon fruit or something, so funny. But that’s kind of what inspired me to make this.

Well, that and I had tons of egg yolks leftover from a recent white cake I made and all these oranges that were just starting to shrink to the point of having to be used or thrown out. It was the perfect answer, and wow, it really does taste like Christmas with every bite. You can put it in and on so many things. Like on toast, use it as a filling for cakes or muffins, spread it on your holiday ham (Yes!), eat it with a spoon, or just do the smart thing and grab a straw (not really, that would be a little gross).

Point being, you need to try it. It would also be the perfect gift for that grouchy neighbor or hard-to-buy-for friend this holiday season, or for anyone really. Wrap it in a pretty little ribbon and write a nice note to go with it and you’ve got a perfect and thoughtful gift that will be well appreciated.

Ingredients

2 1/2 cups juice and 2 tablesspoons zest (from about 6 oranges)
1 3/4 cups sugar
8 egg yolks
3/4 cup water
1 1/2 teaspoons ground cloves
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon salt
1/4 (1/2 stick) butter
2 teaspoons vanilla extract
Instructions

Juice and zest oranges and discard remaining peels.
Whisk egg yolks and sugar together in a medium saucepan until light and frothy then slowly pour in juice and water while whisking. Stir in zest, spices, salt and place over medium low heat. Stir constantly until the curd gets thick enough to coat the back of a spoon, it should take 10 to 12 minutes. It will foam a bit as it boils.
Romove from heat and stir in vanilla and butter until melted, then pour through a fine mesh strainer into a medium bowl or small container. Cover with plastic wrap or lid and allow it to cool then place in refrigerator to chill completely. You can use it while stilll warm or wait for it to chill.
There are so many uses for it. Try it on toast or stir a spoon of it into your tea. It makes a great fillling for cakes or cookies too.

If you can extract just as much taste from these oranges as you extract the colours of it with your photos, it must be a delight! And i'm not even fan of jelly curd :)
