Pineapple cake recipe!

I want to share a traditional Venezuelan recipe and it's the pineapple pie, my madriana does it a lot and today I remember it and here it is, she always decorates it with pineapple slices on top and a lot of syrup too.
The truth is very simple to make and is perfect for any time of year, whether Christmas or birthday and here are the ingredients.

They are 11 ingredients
8 servings
250 grams of margarilla (butter)
1 1/2 cups of sugar
4 units of egg
3 cups prepared flour
1 teaspoon baking powder
1 can of sliced ​​pineapple or you can buy a new one at the supermarket and cut it yourself
1 cup of pineapple juice

And for the candy:
3 cups of sugar
3 tablespoons of margarine
2 cups of pineapple juice
1 drop of lemon juice

Steps to follow to make this recipe:

Use the blender to beat the margarine until it is creamy, if you do not have margarine, then use butter. Then, add the sugar little by little until it dissolves, then the yolks of the eggs, one by one so that they mix well. Reserve egg whites for later use.

To continue with the preparation of the mass of the pineapple cake, we must add the flour and the baking powder, previously sieved or sifted, together with the juice or pineapple juice. Remember to save some of the juice for the candy. In this step it is important to mix everything little by little and well, always in an enveloping way and finishing with a little flour, mix only what is necessary, if you do it too much you could make the cake not rise when cooking it.

To complete the mix, add the whites previously beaten to snow. To achieve this, we only have to beat the whites to form bubbles until we achieve the desired consistency. If you do it with an electric mixer do it at low speed, if on the contrary you do it hand you will not have problems. This will make the pineapple cake fluffy and smooth.

For the caramel, put in a saucepan or pot the three tablespoons of margarine or butter to melt and then add the sugar and the rest of the pineapple juice of the preserves and wait for it to have a golden color and all the ingredients have been integrated well, if you want you can add a few drops of lemon to give a touch of citrus, the latter is optional.

Pour the candy into the mold you will use to cook the pineapple cake in the oven. Cover all the walls of the mold with the caramel and then make a pineapple base, placing the slices previously drained.

Finally empty all the mixture in the mold. Insert in the preheated oven at 180 ° for about 40-45 minutes, to check that the cake is ready you can insert a toothpick or tester in the center and wait for it to come out clean. Once ready, let it rest for 10 to 15 minutes and remove the cake from the mold before it cools completely and serve it with a pina colada without alcohol.
