ramadan is not just about fasting it is about the smell of kitchen and the sound of frying oil every evening my kitchen becomes a busy place but today was special i decided to make the crispest pakoras for my family as the sun started to go down i mixed the spices and the potatoes the oil was bubbling like it was excited too my little brother kept coming to the kitchen to smell the air he asked is it ready yet i laughed and said wait for the adhaan when we finally sat together for iftar and took the first bite the crunch was so loud and perfect everyone smiled and that is the best feeling in the world food tastes better when you share it with people you love​two large potatoes sliced thin ​one large onion sliced ​one cup gram flour or besan ​fresh coriander and green chilies ​salt and red chili powder ​a little bit of water take a big bowl and put your sliced potatoes and onions in it ​add the besan and all the dry spices like salt and chili ​throw in the green leaves for a fresh smell ​add a little water and mix with your hands until everything is coated ​heat the oil in a deep pan ​drop small portions of the mix into the hot oil ​fry them until they turn golden brown and very crunchy ​take them out and serve with spicy chutney
