Rabbit stew in tomato sauce with vegetables
Rabbit meat is delicious and has little fat. If you can find rabbit meat easily, try this stew. It's easy and delicious. This time I will accompany this stew of rabbit meat with vegetables.
Ingredients (four people)
- For the rabbit
- 1 rabbit in pieces
- 1/2 onion
- Tomato sauce
- 3 cloves of garlic, dried or fresh parsley, oregano and half a glass of water
- Olive oil, black pepper and salt
- For the vegetables
- 1 red pepper
- 100 grams of green geans
- 1 broccoli (just the trunk of the broccoli)
- 2 cloves of garlic, olive oil, black pepper and salt
Cooking Time
Around one hour.
Recipe preparation
Let's start. First we will cook the rabbit. To do so:
- Season the meat with salt and black pepper.
- Cut the garlic cloves, onion and parsley into large pieces.
- In a hot pan, fry the rabbit with the spices, onion and garlic. Fry the meat 5 minutes on each side over low heat.
Once the rabbit is browned, add the rabbit and the rest of the ingredients of the pan to a pressure cooker with half a glass of water.
Cover the pressure cooker, put on high heat and, when boiling, reduce to medium heat for 45 minutes.
After 45 minutes of cooking the rabbit will be ready.
Add the rabbit to a hot pan with the tomato sauce. Season with pepper, oregano, parsley and salt to taste.
Then, using a strainer, strain the broth from the pressure cooker.
You can use a spoon to make the most of the broth, as shown in the following image.
Add the broth to the pan with the rabbit stew.
And let the rabbit cook for 7 more minutes over low heat. Then the rabbit will be completely ready, soft and tasty.
We will continue with the vegetables. To do so, cut all the vegetables into strips.
In a pot with salt, cook the broccoli and green beans for 5 minutes.
In a hot pan, add olive oil and sauté the red pepper and garlic. Then, add the rest of the vegetables and add salt and black pepper to taste. Let them sauté for a few minutes until they are ready.
And… ready. Serve the rabbit accompanied with the vegetables. You can accompany it with red wine. And, most important of all… enjoy it! Bon appétit!
