I hope you will try and enjoy these recipes and give me positive comments. Today, I have a new recipe that is for vegetarians. Everyone can try it because it is good and healthy. Brinjals are full of Iron and source of fiber. Moreover, it is my aunt’s recipe. So please share your comments.

Brinjals with Potato:
Ingredients:
- Brinjals 1 KG (Cut in Medium sized pieces with its Head cover)
- Potato 1 KG (Cut in Medium Pieces)
- Tomato 2 Medium Sized
- Onion 2 Medium Sized
- Red Chilli Powder 2 Teaspoon
- Coriander Powder 1 Tablespoon
- Black Pepper Corns 8-10
- Clove 8-10
- Cumin seeds 1 Teaspoon
- Turmeric 1/2 Teaspoon
- Fresh Coriander 1 small bunch
- Green Chillies 4-6
- Water 1 glass
- Oil 1 cup
Recipe:
- Heat oil in a pan at medium flame.
- Add onion and saute it and then add black pepper corns and clove.
- Fry it till it starts aroma.
- Then add Red Chilli powder, turmeric powder, Coriander powder and chopped tomatoes.
- Mix it all and add half glass of water and put the lid on pan, to soften the tomatoes.
- When tomatoes form a puree and the oil separates from it then add Potatoes.
- Now Add Brinjals with Half glass of water and put the lid on pan.
- After 10 – 15 minutes Potato and Brinjals become soft.
- Add Green Chillies and Fresh Coriander.
- Turn the stove to low flame and wait for 5 to 6 minutes.
- Brinjal with potato is ready.
