Ingredients
three tablespoons margarine
two cups chopped apples
three fourth cup chopped celery
half cup chopped onion
half cup chopped carrot
half cup chopped bell pepper
three fourth cup all-purpose flour
one teaspoon curry powder
one teaspoon salt
one teaspoon ground black pepper
half gallon chicken stock
three and half cups stewed tomatoes
two whole cloves
one pound chicken
one teaspoon minced fresh parsley
Instructions:
Dissolve margarine in a stockpot over medium fire. Cook and mix apples, celery, onion, carrot, and bell pepper in dissolved margarine till tender, about five minutes.
Mix flour, curry powder, salt, and black pepper into the vegetable mixture. Pour chicken stock over the mixture; add tomatoes and cloves. Add the diced chicken and parsley; bring the mixture to a boil. Reduce fire to medium-low and cook at a simmer till the chicken is cooked through, about thirty minutes.
