Baked Zucchini with Parmesan
Source
Simple recipe for zucchini (or zucchini) that you can try:
Ingredients:
2 medium-sized zucchinis
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
Optional toppings: grated Parmesan cheese, chopped fresh herbs (such as basil or parsley)
Instructions:
Wash the zucchinis thoroughly and trim off the ends. You can peel the zucchinis if desired, but it's not necessary.
Cut the zucchinis into slices or spears, whichever shape you prefer. Keep the slices/spears about 1/4 inch thick.
Heat the olive oil in a large skillet over medium heat.
Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
Add the zucchini slices/spears to the skillet, spreading them out in a single layer.
Season with salt and pepper to taste. You can also add other herbs or spices if you like, such as dried oregano or red pepper flakes.
Cook the zucchini for about 4-6 minutes on each side, or until they are tender and slightly browned. Flip them halfway through to ensure even cooking.
Once the zucchini is cooked to your desired tenderness, remove them from the skillet and transfer to a serving dish.
Optional: Sprinkle grated Parmesan cheese and chopped fresh herbs over the cooked zucchini as a garnish.
Serve the zucchini immediately as a side dish or as a topping for pasta, rice, or salads.
Enjoy your zucchini dish!
