Eggplant (Aubergine) Veggie Balls (definitely vegetarian, easily vegan)
This is one of my super easy and quick recipes for all you Steemians.
I try to post only simple recipes, because although I enjoy cooking, I enjoy it even more when the recipe is easy and quick.
Ingredients:
1 onion
3 medium sized eggplants (aubergines)
2/3 of a slice of bread loaf (or alternatively and actually better results, use some firm, few days old, bakery bread)
breadcrumbs
grated cheese (real Parmisan cheese, aka Parmiggiano Reggiano, is the best one out of all, though not vegan and unfortunately not even vegetarian as to be called that it must have been produced using traditional rennet)
Cooking instructions:
First diced the onion and saute' it in a pan with a few table spoons of vegetable oil
Peel the eggplants and cut them in small pieces
- When the onion starts turning gold, it's now the time to add the eggplants, salt, pepper and spices (per your own choice
for this recipe I'd go for some nutmeg)
- Cook the eggplants until the pulp gets soft. If they stick to the pan while cooking, try to add a little tiny water
Wait for the eggplants to cool down
In a separate bowl tear the slice of bread into small pieces
Add a couple table spoons of milk or add as much to obtain a pizza dough consistency
Now it's also the time to add some garlic, some fresh herbs such as sage or rosemary, some more pepper and salt
Add the cold eggplants to the bread mixture and keep mixing well
It's time to shape our veggie balls: take a small quantity of mix into your hands and aim to obtain balls that are as spherical as possible.If the mixture is giving you a hard time because it doesn't stick together, then add some bread, or some breadcrumbs and\or grated cheese.
- Place the eggplant veggie balls onto a baking tray and bake in the over for 20/30 minutes at 180 degrees Celsius.
Everyone in the family loves this recipe.
On their own, these veggie balls are quite dry and they go very well when served with some steaming hot tomato sauce. The sauce must be fully cooked as the one that you would use to accompany some spaghetti.
