Chickpea Salad Recipe
Ingredients:
2 cup Black chickpeas, (Boiled)
1 cup Tomatoes, Cut into pieces.
1 Cucumber, Cit into small pieces
1/4 red onion, finely chopped
1/4 cup red or green Chilli
(According to taste)
1/4 cup fresh Coriander, finely chopped.
1/4 cup fresh Peppermint leaves, finely chopped.
1/4 cup crushed cheese (optional)
For the Dressing:
1/2 tsp Salt & black pepper.
1 tbsp lemon juice
1 clove garlic, minced
2 tbsp olive oil
Curd (Optional)
1/2 tsp Mustard powder (optional)
Instructions:
- First of all Take a large bowl and mix the salad ingredients into it.
- Then add olive oil, lemon juice, garlic and mustard powder into salad.
- Nown Add salt and pepper into salad.
- Toss it finally.

Variations:
olives may be added for extra tang.
Boiled quinoa can be used for filling and making it more nutritious.
chili flakes may be used to make salad spicy.
