Udon
Ingredients
three carrots, cut into bite-size pieces
one small onion, cut into bite-size pieces
three tablespoons water
quarter cup vegetable oil
half cup all-purpose flour
two tablespoons all-purpose flour
two tablespoons red curry powder
five cups hot vegetable stock
quarter cup soy sauce
two teaspoons maple syrup
eight ounces udon noodles
INSTRUCTIONS
Place carrots and onion in a microwave-safe bowl; add water. Cover and microwave on high till tender, about four minutes.
Heat oil in a large pot over medium fire. Whisk in half cup plus two tablespoons flour to form a paste, one to two minutes. Mix in curry powder. Whisk in hot vegetable stock slowly till incorporated and smooth, about three minutes. Stir steamed carrots and onion, soy sauce, and maple syrup into the curry broth.
Bring a large pot of water to a boil. Cook udon noodles in boiling water, mixing occasionally ,till noodles are tender yet firm to the bite, ten to tweklve minutes. Drain. Add noodles to curry broth.
