Wild Chilli Bean Burgers!!

Vegetarian Spicy Wild Chilli Bean Burgers

Sometimes you get in late on a Friday and you need a spicy burger fix that doesn't necessarily involve the hunting and killing of a cow. Well why not kill some beans with this maverick spicy bean burger bonanza!!

You will need

1 tin of haricot beans, rinsed and drained
1 tin if kidney beans, rinsed and drained
1 Small onion
2 Hot chillis like colourful jalapeños
½ a clove of garlic
1 fat carrot
1 slice of bread
1 teaspoon of smoked paprika
½ a teaspoon of cumin
1 large egg

To make

First up, finely chop the onion, garlic and chillis

Now using a potato peeler slice strips from the carrot like below, you can then finely diced these strips really easily!

Now bang the carrot, onion, garlic and chilli in a smallish pan and fry for a few minutes till softened. Season with some sea salt whilst frying then set to the side to cool a little.

Whilst they are frying, whizz your slice of bread up in a blender till crumbs

Now tip your haricot beans into a large bowl and using a good old fashioned crusher thing crush them till paste-like

Add your kidney beans and crush them into the mix but don't crush quite as much as the haricot beans so you get some texture

Now add everything together. Your breadcrumbs plus your onion, carrot, chilli and garlic mix then your paprika and cumin and finally egg. Stir it together well and season generously with some sea salt because beans can be mighty bland!

Now let your mix rest for ten to fifteen minutes. Some people leave it overnight in the fridge but sod that I'm hungry. It's a good time to crack open a beer too

So, we have our mighty mix and beer in our belly. Let's cook these spicy little minxes!!

Get a pan on a medium heat.

Pick up a big ball of the mix and form it into a patty in your hand. Now put in the pan. Do this until you fill your pan. This mix makes about four to six parties depending on how big you make them

Now there is a trick to the next bit. When you are tempted to flip these bad boys wait a bit longer than you would think. They are quite soft and need a good 7 or 8 minutes on each side. If necessary turn your heat down a little bit so they don't burn on one side.

So turn them!

Give another 7 or 8 minutes on the other side and tada!!!

They are ready!!

Stick some ketchup on and get stuck in!!

They also freeze really well. Stick then between some greaseproof paper and in a tub and they keep for months!!

Oh now there is a splendid idea!! I haven't but I will!! I use them mostly in soups and chillis and hadn't even thoufht for this!! Cheers!!
