Slow cooker Pulled Pork
This slow cooker pulled pork recipe will change the way you eat pork forever!
INGREDIENTS
Pork Shoulder (I used an unskinned, unboned 2.5kg shoulder)
1/2 cup chicken stock
1 cup BBQ sauce1/2 cup apple cider vinegar
1 tablespoon Dijon or french mustard
1/4 cup brown sugar
1 tablespoon Worcestershire sauce
1 large brown onion, diced/minced
3 cloves of garlic, minced
1 and 1/2 teaspoons thyme
Optional extra – 1 tablespoon chili powder
DIRECTIONS
Using a sharp knife remove skin and excess fat, discard skin (or make crackle!)
Smear the bottom of your slow cooker and sides with a little olive oil and place all the ingredients into the slow cooker and then place the pork on top (without the skin and fat)
Cook on high for 6 hours rotating the meat at the 3 hour mark. Once cooked with two forks shred the meat and remove bones.
Serve on bed of mashed potatoes
