Ingredients

Rice ½ kg
Potatoes ½ kg
Onions 3
Tomatoes 5–6
Ginger paste 2 tablespoons
Green chilli 1
Whole spices (garam masala) As needed
Salt To taste
Mint leaves As needed
Cooking oil 3 table spoon
Yellow food color A pinch
Water 3 glasses

Cooking Process

Step 1: Prepare the Base

Heat oil in a heavy-bottomed pot. Add the sliced onions and cook until they turn golden brown and aromatic.

Step 2: Build the Aroma

Add ginger-garlic paste and garam masala. Fry on medium heat until the raw smell disappears and the spices release their aroma.

Step 3: Cook the Vegetables

Add diced potatoes, green chopped chillies and chopped tomatoes. Sprinkle salt to taste. Cover the pot and cook until the tomatoes soften and turn into a thick gravy. Uncover and sauté for a richer flavor.

Step 4: Add Liquid

Pour in 3 glasses of water and bring to a rolling boil. Stir in the chopped mint leaves for freshness and aroma.

Step 5: Add Rice & Steam (Dum)

Drain the soaked rice and add it to the boiling mixture. Cook on high heat until most of the water evaporates. If using, drizzle the dissolved food color evenly over the rice for a vibrant look. Then reduce the heat to low, cover tightly, and let it steam (dum) for about 10 minutes until the rice is fully cooked and the flavors come together. Ready to serve!
