The small shop wants to enjoy the sweet taste
Shop Atmosphere: A typical jalebi shop is bustling with activity from early morning. Outside the shop, a large iron pan filled with pure ghee or oil is often placed, boiling hot. The confectioner skillfully fills a cotton cloth with fermented dough and forms a round shape in the pan. As the white batter falls into the pan, it takes the shape of golden rings.
Aroma and Taste: The combined aroma of sugar syrup and ghee attracts anyone passing by a jalebi shop. When these jalebis emerge crisp from the pan, they are immediately dipped in sugar syrup. The syrup absorbs the sugar, making them juicy and shiny. The first bite of a hot jalebi brings an explosion of sweetness to the mouth.
Social Significance: Jalebi is served with different accompaniments in different parts of India. In some places, it's eaten with milk and rabri, while in North India, yogurt and jalebi are a popular breakfast. In Gujarat, Sunday mornings are incomplete without fafda and jalebi. During festivals, especially Dussehra and Diwali, these shops are not exactly cheap.
