SLC28-W1 - Tomato Soup
Hi food lovers! I couldn't resist this contest because you know: there are some soups you cook for hunger, while others are soups you cook because your soul needs a warm hug. Tomato soup falls into the second category. I love this soup, though we call it stew over here in Nigeria. I used to prepare it weekly and eat it at least 4 times a week, be it in the Winter or summer. I love it because it's rich, colorful, and comforting! And it's perfect for cold days, a runny nose, or simply when you need something delicious that will make you feel like a soft blanket in your stomach.
My friends this special pot of goodness is even better and exciting when it's packed with amazing ingredients like carrots, spring onions, ginger, peppers, onions and sea food like oysters. Together these ingredients create a powerful bowl of flavor, energy and nutrients that our body will thank us for.
Tomatoes, spring onions, ginger, cayenne peppers, onions, carrots, green beans, yellow pepper, Fresh pepper, natural mixed spices, Maggi cubes, and oysters as a (protein source.)
Oh no, the moment I felt like a chef preparing warriors for battle is here:
- Wash your tomatoes, shombo, carrots, ginger, spring onions, onions, and green beans.
Chop your spring onions and blend them.
Blend your tomatoes, shombo, and ginger together and put them aside.
Chop your onions and keep them aside.
Chop your carrots, green beans, and yellow pepper and keep them aside.
- Remove your oysters from the Shell and clean thoroughly.
- Season your oysters with pepper, salt, onions, and seasoning cubes and cook them until they're done.
Pour Vegetable oil into your frying Pan and heat it.
Add your chopped onions, chopped carrots, green beans, and yellow pepper, then add your Blended spring onions. Sauté until your kitchen smells like heaven!
The aroma was so good that it had the power to attract my kids from the sitting room, they were saying Mom we can't wait to eat! Hahaha.
- Next, I pour my blended tomato mix into the pot, then I allow it to cook on medium heat, stirring occasionally to avoid burning.
It was bubbling like some magic potion, hahaha but I wasn't scared because that was just flavor building.
- Next, I add my natural mixed spices, and seasoning cubes and allow everything to mix well.
Oh, this stage really determines the taste of my soup, it was rich!!
- In the last stage I added my VIP guest to the pot - my well-cooked oysters, I allowed it to infuse well with my tomato soup.
By now My kitchen was smelling like joy itself.
I serve it warm with plain rice, sometimes we eat it with pasta, or boiled yams, potatoes, or plantains. Some people used to eat with bread or just drink it.
My body was telling me " Ah, this is life when I was eating it. Hahaha.
Tomato soup or stew is loaded with countless nutritional values:
Tomatoes contain Vitamin C & A and lycopene, these nutrients boost our immunity, and fight infections. It improves our eyesight and protects our heart, just what we need to fight cold and flu during winter.
Vegetable oil is an energy booster; it contains healthy fats and Vitamin E which keeps our skin fresh and soft. Another important nutrient for winter because our bodies burn fat for heat.
Spring onions give us vitamins A, C, and K which are better for a sharp eye, and immunity and strong bones; these prevent cold and nasal infections.
Onions: have antioxidants and sulfur compounds that help in fighting bacteria, reduce inflammation, and clear a blocked nose. A perfect nutrient during cold weather.
Carrots are good at beta-carotene, vitamin k and fiber. Shombo, fresh pepper and yellow pepper are the flavor warriors, they contain Vitamin C, B6, capsaicin and potassium, all these boost our metabolism and warm up our body and improve our blood flow.
Ginger is the bodyguard of them all; it contains gingerol and antioxidants that fight cold/flu, boost metabolism, and soothe the throat.
Lastly, oysters: give us protein, zinc, iron, Omega 3 which help us builds muscle boost our energy and sharpen our immunity.

- It helps us stay hydrated and nourishes our bodies.
- It's easy to digest.
- It is packed with vitamins and antioxidants.
In my language: I would say a bowl a day keeps winter wahala (problems) away!
1. Balancing the tomato thickness, sometimes tomatoes are watery or thick, but for this, I went for a species that is naturally thick and sweet.
2. Blending smoothly; at a point, my blender behaves tired and stubborn hahaha. But I pulled it through.
3. Getting Pepper level right: hahaha you know an extra piece of it can make your spirit live your body. But I love spicy food though. So for this use discernment and your level of tolerance.

Tomato soup is more than just a meal, it's comfort, warm and soothing, I would say it's happiness served in one delish bowl. Every ingredient brings its superpower, turning my soup into a nutrient-packed winter shield. Anyhow you want to take it, it's just one of the simplest joys of life. So whenever the weather is gloomy, or your body needs a warm hug then cook a pot of this goodness let it warm you inside out!
