Introduction to Kebab

Kebabs are one of the favorite dishes, famous for their rich taste, texture and irresistible aroma. They are made with minced meat, spices, herbs and pulses. Kebabs come in different varieties, from the smoky grilled Shami Kebab to the smoky grilled Sheek Kebab, known for their distinct taste. The versatility of Kebabs makes Kebabs special, Kebabs are prepared by frying, grilling and baking. They are served as snacks with biryani, pulao, rice, naan bread, paratha, chutney. Kebabs provide the perfect blend of tradition and taste. Making Kebabs at home is very easy and nutritious. Kebabs are an ideal dish for parties, family meals or festivals, which are prepared with a few basic ingredients and spices. Delicious Kebabs play a helpful role in satisfying our every craving.

The Kebab Challenge

In the first week of the Kebab Challenge competition, we will learn the technique of making Shami Kebab. In making Shami Kebab, beef, lentil and various spices are used according to taste for flavor. This week, we will discuss the detailed cooking process of making Shami Kebab. Shami Kebab offers a unique blend of texture and taste. Homemade kebabs are as healthy as they are delicious. Shami Kebab is a protein-rich dish made with a combination of meat and pulses. Meat, lentil, onion, ginger, garlic and various spices are used to make Shami Kebab. In the first week of the Steemit Learning Challenge competition, I am going to share an easy and delicious recipe for making Shami Kebab.

Ingredients

Ingredients required for making Shami Kabab:

Chana dal1 cup

Turmeric powder1 teaspoon
Chili powder1 tablespoon
Coriander powder1 teaspoon
Cumin powder1 teaspoon
Black pepper powder1/4 teaspoon
Ginger & Garlic paste2 tbsp
Egg2 pcs
Cinnamon2 pcs
Bay leaves2 pcs
White cardamom3- 4 pcs
Black cardamom2 pcs
Cloves4-5 pcs
Salt1 tbsp
Mustard oil2 tablespoons

Making Process

Step 1:

To make Shami Kabab, you need to add lentil to the beef and the lentil must be half the amount of beef. Here I have taken 1 cup of lentil for 400 grams of beef. I soaked 1 cup of lentil in a bowl with plenty of water for at least 4 hours.

Step 2:

When the daal is well soaked and soft, I drain it from the water and put it in a bowl. I added 400 grams of boneless and fat-free beef to the dal, which I cut into small pieces for quick cooking. Now I added 1 teaspoon of ginger paste, 1 teaspoon of garlic paste, 1 tablespoon of chili powder, 1 teaspoon of turmeric powder, 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, 2 pieces of cinnamon, 4 white cardamoms, 2 black cardamoms, 1/4 teaspoon of black chili powder, 2 bay leaves, 4 cloves, 1 teaspoon of salt, Half a cup of chopped onion and 2 tablespoons of mustard oil.

Step 3:

After adding all the ingredients, I mixed it very well with the lentils and beef. Then I added 2 cups of water and put the pot on the stove. I cooked the meat and lentils on medium heat for about 1 hour. After the meat and lentil mixture was cooked, I left it to cool.

Step 4:

After cooling the beef and dal mixture, I took bay leaves, cinnamon, cardamom, and cloves separately. Now I took the mixture in a blender jar and blended it, there is no need to blend it too finely. Then, while eating the kebab, it will be nice to eat the meat pieces falling under your teeth. After blending, I kept it in a mixing bowl.

Step 5:

At this stage, I added chopped coriander leaves, chopped onion, and chopped chili to the blended mixture. Then I mixed everything together with my hands.

Step 6:

I used two egg whites with the mixture for binding. Then I mixed everything very well. The mixture is ready to make Shami Kabab.

Step 7:
Now, I took a little of the mixture and shaped it into the shape of the kebabs I wanted. I made all the kebabs in the same way and kept them in a bowl.

Step 8:

To fry the kebabs, I heated oil in a pan on the stove. The kebabs must be fried in deep oil. The oil should be heated well by keeping the stove on high heat. At this stage, the kebabs should be left in the oil. When both sides turn slightly red, the kebabs can be moved from side to side. At this stage, the stove should be kept on low heat and fried. When they turn brown, drain the oil and take out the kebabs.
