Required materials.
At the beginning of cooking, I measured and prepared all the ingredients. Below is a list:
| Ingredient Name | Quantity | Ingredient Name | Quantity |
| Large potatoes | 3-4 | Onions | 1 (large) |
| Green chillies | 4-5 | Coriander leaves | As much |
| Rice powder | Half cup | Flour | Half cup |
| Turmeric powder | 1 teaspoon | Chilli powder | 1 teaspoon |
| Hot spice powder | 1 teaspoon | Salt | To taste |
| Soybean oil for frying | As much | Water | As needed |

👨🍳 The preparation method for Potato Pakora recipe (step by step) is given below:

✔ I first washed the potatoes thoroughly and peeled them. Then, using a grater, I finely grated all the potatoes.

✔ Now I took the grated potatoes in a bowl and washed them thoroughly with clean water several times. Once the grated potatoes were washed, I squeezed them with my hands to drain the excess water and placed them in a dry bowl.

✔ At this stage, I added the washed and grated potatoes, chopped onion, green chillies and a little coriander leaves. Then I lightly mixed all the ingredients with my hands.
✔ Then I added chili powder, turmeric powder, garam masala and salt to taste to this mashed potato. I mixed the spices very well with the potatoes and left it for a while.

✔ Now I mixed all the ingredients together, adding rice powder and flour for binding. The rice powder will help make the pakora extra crunchy. Be careful not to make the mixture too thin.
✔ At this stage, I let the oil heat up in a pan on the stove. Then, when the oil was hot enough, I took small portions of the mixture, made small round balls or pakora shapes, and carefully dropped the pakoras one by one into the oil.

✔ Now, I turned the potato pakoras over and fried them on medium heat. When the potato pakoras turned reddish or golden brown, I drained the oil.

The experience of making potato pakoras is always a joy for me. Potato pakoras are not just a recipe for me, but an integral part of the afternoon chat. Whenever I cook them, the whole house fills with a wonderful aroma of spices and frying. I have seen from my experience that when the potato slices are washed, dried completely and a little rice powder is added to them, the pakoras stay crunchy for a long time.
When I fry hot pakoras with my own hands and serve them to my family and see the smiles of satisfaction on their faces, then all the hard work seems worthwhile. And especially on a rainy day, the experience of eating these crunchy potato pakoras with a cup of steaming tea sitting by the window is always special."
