Margarine/ butter / oil Free homemade Cake with Tropical Fruit Compote🍰
Shall we try a homemade cake without margarine or butter?
These days, I am trying different kinds of homemade cakes that are easy to make. Some of them are healthier than normal cakes because I avoid adding certain ingredients like magarine.
Yesterday, I tried a beautiful recipe. It is a homemade mango and pineapple cake. It was really soft, tasty, and refreshing.
Ingredients:
For the cake we need,
115 g flour
20 g cornflour
1 tbsp baking powder
1 tbsp vanilla essence
2 eggs
125 g powdered sugar
For the Fruit Compote we need,
Mango
Pineapple
Sugar
Water
First, preheat your oven to 180°C for 10 minutes. Grease your cake tray lightly with margarine or oil and line it with baking paper.
Separate the egg yolks and whites. Beat the egg yolks with powdered sugar until the mixture becomes soft and fluffy in a large bowl. Add 1tsp vanilla essence and mix well.
Sift the flour, cornflour, and baking powder together 3 times. Slowly fold the flour mixture into the prepared egg mixture. Be careful not to over mix.
In another bowl, beat the egg whites until they become soft and fluffy. Gently fold them into the batter using a spatula. This helps to make the cake light and soft.
Pour the batter into the prepared cake tray and level it by tapping. Bake it at 175°C for about 40 minutes or until a toothpick inserted in the center comes out clean.
Let's prepare the Fruit compote now.
While the cake is baking, prepare the topping. Cut the mango and pineapple into small pieces. Put them into a clay pot or saucepan. Do not use an aluminum pot. Add 2tbsp of sugar and a little water. Cook it on low heat until the fruits become soft and the mixture turns into a thick, syrupy compote.
Once the cake has cooled well, cut it horizontally into two flat layers. Spread some icing on the bottom layer and add a generous amount of homemade fruit compote.
Place the second layer on top of the cake. Spread a little icing and fruit compote over the surface.
