Green because it's the colour of Ireland and part of our flag. As for the pie and stew, well there is an stew called the Irish stew which is Irish, that one you named I never heard of it
I did not know about the color being from the flag, I actually had to search Mulligan Stew on google, I guess it is a traditional Hobo stew, I'd seen it in so many movies and TV shows and it always seemed to be Irish actors or actors portraying Irish people that were eating or making it. One of the great things about the Steem Block Chain, learning about false culture Ideas imparted by Hollywood. I never had a need to know what Mulligan Stew was until I thought to ask.
